The Kai Wasabi, 8 1/4-inch Yanagiba Knife is a traditional Japanese blade featuring a single bevel. This design is perfect for precision cuts necessary for filleting fish and preparing sushi. The durable design and nice weight will make every cut a breeze. In addition the slender blade allows for delicate cuts. 

The blade is made of a high-carbon, stainless steel, which allows the blade to take and hold a sharper edge, for longer. Additionally, the handle is made of a polypropylene and bamboo powder mix that provides the ultimate in comfort and strength.

    Used the knife to cut sashimi. It was so sharp. Made nice clean slices. Really like this knife
